Chuẩn bị nguyên liệu. Hành tím, và tỏi bóc vỏ lụa, bằm nhỏ. Ớt thái khoanh tròn.
Sụn gà rửa sạch, đem ướp với sụn gà, xì dầu, dầu mè, đường và hạt tiêu trong 20 phút cho thấm. Chuẩn bị một bát trộn, thêm trứng, bột chiên tempura và bia vào trộn đều, để yên trong 15 phút.
Làm nóng chảo với lượng dầu ngập mặt, nhúng sụn gà vào hỗn hợp bột thành một lớp áo mỏng rồi thả vào chảo dầu chiên cho đến khi vàng đều thì vớt ra đĩa có lót sẵn giấy thấm dầu cho ráo bớt dầu thừa.
Làm nóng một chảo khác với chút dầu láng mặt, trút hành tây và tỏi, ớt vào phi thơm. Trút sụn gà, muối và hạt tiêu vào xóc đều trong 15 giây. Rắc hành lá cắt nhỏ lên trên mặt, xóc lại vài lần nữa thì tắt bếp.
