Cho sườn vào chén, thêm 1/2 số tiêu, 1 muỗng canh nước mắm, 1 muỗng canh đường, trộn trều ướp khoảng 1 tiếng. Đun nóng 1 muỗng canh dầu điều ở chảo, phi hành và tỏi băm thơm thì cho sườn vào nồi, dùng đũa đảo đều đến khi sườn hơi cháy xém bề mặt.
Đổ vào nồi sườn nước lọc xâm xấp với mặt sườn, thêm 1 muỗng cà phê nước hàng, 2 muỗng cà phê đường, 2 muỗng cà phê nước mắm, 1/2 muỗng cà phê muối, đun sôi lửa nhỏ đến khi sườn thấm mềm, nước kho rút bớt nước.
Nêm nếm lại tùy theo khẩu vị, tắt bếp rắc tiêu còn lại lên bề mặt, múc ra đĩa dùng với cơm trắng.
